1/3C Gluten Free flour
1 scoop Chocolate Mint Cookie protein- available HERE
1t stevia in the raw
1/4t baking powder
2t cocoa powder
6T liquid egg whites OR 2 regular egg whites
1/8t peppermint extract
1/2T Mini chocolate chips (I like Enjoy Life chocolate chips-dairy, nut and soy free)
1T Chocolate peanut butter spread. (I used Dark Chocolate Dreams by Peanut Butter & Co)
In a small bowl, combine all pancake dry ingredients and mix well.
Add in the wet ingredients for pancakes and whisk until well combined.
Heat a small skillet over low/medium heat and spray with nonstick cooking spray.
Add 1/4C of batter and spread into a pancake. Allow to cook approx 1 min, then flip and cook another 45sec-1min
Repeat until all batter is used and plate.
If you would like to add the toppings:
Place the Chocolate peanut butter spread in a microwave safe bowl and warm for 10 seconds or until smooth.
Spoon warm peanut butter spread into the corner of a plastic sandwich baggie and snip the tip off and drizzle over pancake stack. Then top with with mini chocolate chips..then dig in and enjoy!
