Ingredients
-1 whole egg
-4 egg whites
-1t vanilla extract
-1/2C Enjoy Life Chocolate chips- melted and completly cooled
-3/4C low-fat 1% cottage cheese
-1/4C cocoa powder
-3/4C flour (all purpose, oat or whole wheat)
1/4t salt
1/2t baking powder
Directions:
-Preheat oven to 325*
-Using an 8″ square pan, spray with non-stick cooking spray
-Using a food processor (or blender if you don’t own a food processor) mix egg, egg whites, cottage cheese, and vanilla extract. Mix until smooth (about 30-45 seconds)
-Add in the melted chocolate chips and mix again for another 20 seconds or so.
-In a medium mixing bowl, combine the flour, cocoa powder, salt and baking powder.
-Add in the food processor mixture to the mixing bowl and stir just until all ingredients are combined, do not over mix.
-Pour batter into 8″ prepared pan and bake for 18-20 minutes.
-Cool on a wire rack and once cooled, dust with powdered sugar and cut into 12 squares and store in an airtight container.
