4 boneless, skinless chicken breasts
2T minced fresh cilantro
2 1⁄2 T lime juice
1 1⁄2 T olive oil
1C plum tomatoes (about 3)
2 1⁄2 t lime juice
2 1⁄2 t white onion minced
In medium bowl, combine cilantro, lime juice, olive oil, salt. Add in chicken breasts and coat with mixture. Let them sit for 10 mins, flipping after 5 mins to marinade each side evenly.
While chicken is in marinade, chop and gently stir all ingredients for salsa. Set aside.
Heat a grill pan or skillet over medium heat. Spray with cooking spray and place chicken in pan. Discard any leftover marinade.
Cook over medium heat for approx. 6 mins each side or until juices run clear. Place cooked chicken on plate and top with the fresh salsa.
