Protein Pumpkin Spice Mousse Bites

October.  I swear it is the busiest month of the year.  Weddings, bonfires, hayrides, Halloween parties, school functions, sports, raking leaves…the list goes on and on.  Our October is filled before August is over!  So with all the recipes I shared this week I wanted to share a fool-proof, whip it together in a flash type pumpkin recipe that was not only tasty but of course healthy. 🙂

I think we all have last-minute parties, office events and such that pop up with little notice and if you are like me, the first thing I think is “What can I whip up really quick?” Well, here is the answer!!  These yummy little mini fillo shells are ready-made.  They are found in the freezer section at the grocery store.  They are 15 per pack and run about $2-3 a box and only take about 10 min to thaw and are so light, crispy and delicious.  Partner that with a protein infused pumpkin mousse and it’s a win!!  I am not exaggerating when I say you can whip these up in 10 minutes and be on your way to the party.

These bites are light, crispy, fluffy, just the right amount of sweet and get you that yummy fall pumpkin fix.

Oh- and how could I forget todays “Pointless Pumpkin Fact” 🙂  For our final day, day 7. Here is you’re daily dose of useless information:

Ingredients

9 Mini Fillo Shells (I included a photo of the box below for you)

1/4C Lite Cool Whip

1/8C Canned Pumpkin

1/2 teaspoon Pumpkin Pie Spice

3 Tablespoons 1stPhorm Level-1 Cinnamon Cookie Batter protein (found HERE)

1 Plastic Sandwich Baggie (will be used to pipe filling into shells)

Directions:

Place shells on tray or platter

In a small bowl combine the cool whip, canned pumpkin, pumpkin pie spice and protein.

Whisk until smooth and creamy,

Spoon filling into the corner of the sandwich baggie and snip the corner off to enable you to pipe the filling into the shells.

Fill the shells evenly with the mousse.  You may top with a small dollop of cool whip and dash of additional pumpkin pie spice for presentation.

Place in the fridge until ready to enjoy.

Do you guys believe me now?  Literally 10 minutes and so delicious!!! 🙂

  1. Does this recipe have to include the pumpkin? What if we just wanted to do the cool whip and protein powder, will it still work?

    1. Yes. You can omit the pumpkin and just use protein and cool whip and it’s delicious! I love it with cool whip, chocolate protein and a pinch of cocoa powder 😊👍🏼
