Pumpkin Spice Overnight Oats

Overnight Oats… do I have your attention? 🙂  This recipe is a complete meal for those busy fall mornings.  Overnight oats not only make a great breakfast on the go but also a wonderful lunch.  The best part is they are portable!  Take them to work, the gym, camping, when you travel to make sure your meals stay on point.  Your possibilities are endless!

I know you are on the edge of your seat waiting for todays pumpkin fact on day 5 of all things pumpkin.  So, here it is, I gave you 2 facts since I posted this so late today. lol :

  1. There are 45 different varieties of pumpkins!
  2. Pumpkin seeds have more protein than peanuts!

Now that you have furthered your education of all things pumpkin, get to making yourself some overnight oats. 🙂

 

 

Ingredients

1/2 C Old Fashioned Oats

1 scoop 1stPhorm Level-1 Cinnamon Cookie Batter protein (available HERE)

3/4C Unsweetened Almond Milk

1/4C Canned Pumpkin

1 teaspoon stevia

1/2 teaspoon pumpkin pie spice

Optional topping ideas: chopped walnuts, cranberries, pecans, mini chocolate chips

Directions:

Using a pint canning jar with lid and seal, layer ingredients in jar as listed.

You may stir them to combine or cover and seal then shake.

Place in the fridge overnight and wake up to a delicious and complete breakfast ready to go!

  • If you use quick oats, they will be ready to eat in 30mins but can be placed in the fridge overnight as well.
