1/3C coconut oil
4T creamy peanut butter
2.5C oats (quick oats or old fashioned)
1/3C shredded coconut flakes
Using a food processor or blender, combine the coconut oil, peanut butter and oats. Blend until well combined.
Place coconut flakes in a small bowl.
Form dough into 1″ balls and roll in the coconut. Place on a wax paper lined baking sheet or cuting board.
Place the truffles in the fridge to set for 30min. Remove and transfer to a plastic baggie or airtight container and store in the fridge.
Makes approx 25 truffles.
