Bacon Jacked Chicken

I made this recipe for lunch yesterday.   It was so good and offered something different than plain chicken.  I used turkey bacon on this but you can you pork bacon as well.  You can cut a chicken breast into strips for more of a chicken finger take on it or leave them as the whole breast.  

    I used these thin sliced chicken breasts I had in the freezer and they cooked up great!  I did try a piece drizzled with just a little bitty bit of honey and it was SO good!..however I wanted to keep this as a no carb option but I just wanted to share..a touch of honey was a win! :-)

    Bacon Jacked Chicken recipe

    Bacon Jacked Chicken

    • 4 Boneless Skinless Chicken Breasts pounded to even thickness

    • 2 slices of thin sliced pepperjack cheese cut in half (4 pieces total- 1 for each chicken breast)

    • 4 strips of turkey or pork bacon

    • Salt & pepper to taste

    • Pinch of cayenne pepper

    • 1/4 teaspoon of garlic powder 

    • Dried or fresh parsley to garnish

    1) Preheat oven to 375*

    2) Line a baking sheet with foil and top with a wire cooking rack (this will allow the bacon to crisp better)

    3) Season the chicken breast with salt, pepper, garlic powder and cayenne pepper

    4) Place half a slice of cheese on top of the chicken then wrap with a piece of bacon.

    5) Bake for 20-25min then switch to Broil and broil for 2-3 min until bacon finishes crisping (keep a watch on it as it can happen quickly)
