Mint Chocolate Chip Protein Doughnuts

  • These doughnuts are so good you won’t believe they only have 7g of carbs and 1.6g of sugar!  This is a great way to start your morning.   If you don’t own a doughnut pan, you can use a cupcake pan too!  The baking time will be the same.

You can prepare a big batch of these and freeze them too!

Mint Chocolate Chip Protein Doughnuts recipe

Ingredients

DOUGHNUTS:
  • 1/3C Coconut flour
  • 1/3C Stevia
  • 1 scoop 1stPhorm Level-1 Mint Ice Cream Sandwich protein powder
  • 1/4t salt
  • 1t baking powder
  • 1t vanilla extract
  • 2T applesauce
  • 1/3 C & 2T unsweetened vanilla almond milk
  • 2 egg whites
  • 1 whole egg
GLAZE:

 

  • 2T coconut oil ½ scoop
  • 1stPhorm Level-1 Mint Ice Cream Sandwich Protein
  • Optional additional toppings: sprinkles, nuts, mini chocolate chips, etc

Directions

1) Preheat oven to 325*
2) Spray doughnut pan with nonstick cooking spray

3) In a small bowl mix together all dry ingredients

4) In a medium bowl mix together all wet ingredients

5) Add the small bowl to the medium bowl and mix well

6) Spoon into doughnut pan and bake for 20-23mins. Once done, let rest in pan 2-3 mins then turn doughnuts out onto cooling rack. Allow doughnuts to cool completely

7) When doughnuts are cooled, you can glaze them: In a small bowl, but large enough to dip doughnut in, add 2T coconut oil and microwave 15-20 seconds. Just enough to soften the oil and begin to melt it. You don’t want it completely melted

8) Add a small amount of the protein powder at a time and mix until all protein is used. (Glaze should be a similar consistency to melted soft serve ice cream)

9) Dip the doughnuts into the glaze and place on a plate or tray. Once all are glazed, place in the fridge and let glaze set 4-5 mins. Remove and place in an airtight container and enjoy!
